The marinade
Meat sits overnight in yoghurt, ginger, garlic and fried onion — long enough that the spice stops sitting on the surface and moves in.
Biryani By Kin · Govindpuri, Gwalior
Long-grain rice, whole spice and meat that has been in the pot since morning. Cooked on dum, sealed for the journey, and never opened until it reaches you.
From the family behind Kwality Restaurant — Gwalior, since 1971
01 — The Dum
Four hours, four steps
Meat sits overnight in yoghurt, ginger, garlic and fried onion — long enough that the spice stops sitting on the surface and moves in.
Aged long-grain basmati, parboiled in whole spice and pulled at seventy percent. It finishes in the steam, not in the water.
Layered into the handi, saffron milk over the top, and a rope of dough pressed around the lid. Nothing escapes after this point.
Low coal, no peeking, and the dough stays on all the way to your door. The first breath of it belongs to whoever ordered it.
03 — Order
Choose from 18 Hyderabadi, Lucknowi and Kolkata biryanis. Prices are ₹400–₹550 including taxes. Call or send your order on WhatsApp.
The family
Kwality Restaurant has fed Gwalior from Green Garden Road since 1971 — grandfather, then father, and now us. Biryani By Kin is the third generation's own kitchen: one thing, done slowly, done properly.
Three generations on the same fire.
